About
Pansy Veronica Gomes, or Nina (as her grandchildren lovingly called her), is widely regarded as one of, if not the best cook in the Skelchy-Gomes family. The image of her labouring over a pot of Inche Mintu (cabbage rolls) or hand-grinding rempah (spices) for a curry is seared into our memories. Just the mere mention of her Devil Curry is enough to make everyone salivate.
Watching her cook was an adventure in and of itself. While most Malaysians subscribe to the “agak-agak” cooking motto, Nina took it a step further. She measured many ingredients using only her hand, with several of her recipes including instructions like, “add a handful of cumin”. Yet, the taste of her food never wavered; every meal was guaranteed to leave us satisfied and satiated.
After her passing in 2013, her recipes became a way for us to honour and remember her.
Junji Delfino, or Nona (as her granddaughter lovingly calls her), has worked tirelessly over the last 13 years to preserve the memory of Nina’s cooking. Over many sleepless nights, she has painstakingly deciphered what’s really in a single “Nina-handful” to recreate Nina’s best hits.
To the family, Nina’s food will always call to mind memories of home and a simpler time. And we want to share the experience with you.
