The Long Table No. 2 — Archipelago

I’m hosting another supper at my place — a shared table for people who enjoy food, conversation, and gathering slowly with others.

This second edition is inspired by the Indonesian archipelago — shaped by regional dishes, celebratory rice tables, pasar snacks, herbs, spice, smoke, coconut, and memory.

Some dishes come from childhood.Some from family cooking.Some from regions and flavours I continue returning to over the years.

At the center of the table is nasi kuning, surrounded by communal dishes meant to be passed around, shared, and eaten together.

It’s a slower kind of evening.A communal table.A mix of strangers and familiar faces.

Somewhere between a dinner gathering and a cultural experience.

About the Host

Hi, I’m Hesti.

I grew up in Indonesia and have spent the past few years living across cultures — something that naturally shapes the way I cook and host.

I’m also the creator of Tahdig Bites — a Persian-inspired concept developed through pop-ups in Kuala Lumpur.

The Long Table Club is a more personal extension of that — bringing people together through themed suppers shaped by food, memory, and conversation.

What is The Long Table Club?

It’s a shared table.

A small group gathered for the evening — open to conversation, connection, and the experience of being present with others.

Each edition explores a different theme, cuisine, or story through food served across the table.

You don’t just come for the food — you come to be part of the table.

What to Expect

• A multi-course menu, served throughout the evening

• 8–10 guests seated together at one table

• Shared, family-style dining

• Dishes introduced with context and story

• A slow, unhurried evening — no fixed end

The menu is prepared using halal ingredients, and vegetarian preferences can be accommodated where needed.

This menu explores fragments of the Indonesian archipelago — celebratory rice tables, pasar snacks, herb-heavy regional dishes, and recipes shaped by gathering, memory, and home.

🥤 Arrival — Cooling the Body

Air Tempayang

A cooling herbal drink I grew up drinking at home during hot afternoons.

🌈 Small Bite — Pasar Memories

Ongol-Ongol Singkong Pelangi

Colourful cassava bites inspired by Indonesian pasar snacks and childhood memories.

🍽 Main Feast — Across the Archipelago

Nasi kuning and communal dishes inspired by different parts of Indonesia.

• Nasi Kuning — celebratory turmeric rice often served during gatherings and special occasions

• Sate Lilit — Balinese satay wrapped around skewers with herbs and coconut

• Udang Bakar — grilled prawns using my mother’s Padang-style grilling marinade

• Ayam Woku Kemangi — aromatic Manado-style chicken with herbs and basil

• Perkedel Jagung Kecombrang — corn fritters with torch ginger flower

• Anyang — Minang vegetables and coconut with fresh citrus and spice

• Kering Tempe Kacang Pedas Manis — crispy tempe and peanuts glazed with sweet spicy sambal

• Telur Balado — eggs coated in rich Minang chili sambal

• Kerupuk Udang

• Kerupuk Singkong Pedas

Teh Talua

A frothy Minang tea enriched with egg yolk and condensed milk, traditionally served as a warming, energising drink.
